At Danisco, our patented production of MicroGARD® fermentates is an extension of traditional food fermentation technology. Published research has shown that shelf-life extension in traditional fermented foods can in part, be attributed to metabolites produced by the microbial culture(s) during fermentation as part of the natural process of ensuring survival in a competitive environment. The metabolites produced in these traditional fermented foods vary with the specific microbial culture used; food microbial cultures, commonly used in traditional cultured/fermented foods, have been found to produce various organic acids, peptides and other metabolites.
