Danisco’s HOLDBAC™ YM Protective Cultures have proven highly effective against yeasts and moulds in numerous challenge tests – meeting requirements for natural or organic labelling and overcoming the increased risk of contamination due to the ban of some biocides in packaging materials.

In addition to their protective ability, the cultures enable fresh dairy products to withstand mild temperature abuse during their shelf life. The cultures have no influence on post-acidification and can improve the texture of yogurts. Sour cream and fresh cheese are other suitable applications.

Protection from hazardous chemical substances – Biocide Directive 98/8/EC
The Biocide Directive involves chemical substances used as disinfectants in different areas or for preservation of products and materials. As a result, some chemicals such as formaldehyde or benzyl benzoate will be banned as biocides in food applications. In the future, the food contact legislation is expected to be even more restrictive in the approval of biocides.

Within the food industry, this regulation already has implications for the use of biocides in food packaging that were applied in response to growing concern over food safety issues. Indeed, removing these substances may allow yeast and mould spores to enter the foodchain via the packaging or food contact surfaces, causing spoilage.
